Cooking with Carmen

Dear Friends of Carmen's Salsa and Moles,

It has been a fantastic short season for me and Winter is already here! Many of you and other folks at the market are asking me about cooking classes in particular Tamales. I am happy to announce that I am ready to offer a couple of cooking classes perfect for the holidays. In my family there are two labor intensive meals that we cannot be without for the holidays: Tamales and Menudo!

Cooking tamales are labor intensive and are traditional reserved for the holidays where there would be many willing hands available. The word Tamal comes from Nahautl, the language of the Aztecs, meaning any corn dough cooked in corn husks.

Sonoran Style Tamales:

Sonoran Style Tamales

Learn to make authentic Sonoran style tamales. We will use freshly corn masa, which makes moist, flavorful tamales. For the filling we will use Sonoran red chile mole with slow cooked beef. We will use freshly rendered BCFM locally made lard.

Sonoran Style Menudo:

It is hard to find soul-filling menudo around town. Learn to make your own. Menudo is time and labor intensive to prepare but worth every minute. Menudo is a traditional Mexican soup made with tripe (beef stomach called pancitas). It uses hominy and is topped with cilantro, onions, oregano, key limes and chiltepin. Menudo is believed to be a remedy for hangovers.

To close, keep in mind that it is almost the end of the BCFM season. We will be at BCFM every Saturday until November 19th, the last Saturday of the season and the weekend before Thanksgiving. Remember that the Oaxacan mole is a perfect sauce for your leftover Turkey. Also, it is time to start stocking up with your moles.

Don't forget about the 2 day Winter BCFM market the first week of December.
